selected for catered dinners. With the down turn in the economy options had to be found to replace tenderloin and it has been fun cooking new dishes. Michael Jones &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;executive&lt;/span&gt; chef at Catering Plus has come up with some great dishes. Last week we served a beef &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;tagine&lt;/span&gt; on a food station in a &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;tagine&lt;/span&gt; oven  for the  &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;Moroccan&lt;/span&gt;  theme, which had great flavor and was an exotic experience for  the guest. Last year we had a request  for short ribs for a seated wedding dinner and to make it more upscale we served it boneless, and got a great &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;response&lt;/span&gt; from the guest. My  top choice is our &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;Texas&lt;/span&gt; style brisket of beef for the BBQ weddings or just a more down home type meal topped with caramelized onions.  Also the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;bistro&lt;/span&gt; or s&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;onoma&lt;/span&gt; cut of beef which many has names all over the country, is from the shoulder. This cut marinated or smoked and grilled and seasoned just right is winner. It has tobe  cut on a 45 degree angle and cooked no more than medium to be tender.  The &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_8"&gt;bi&lt;/span&gt;stro steak looks more like a shorter pork tenderloin in size and is also very lean and has very &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;little&lt;/span&gt; weight loss after trimming. Well first I   ask   can I get some information on the type of wedding reception you will be having and the caller says I just want to know how much a wedding cost. Okay  I would be happy to give price ranges and I   quote prices for seated dinners 28.00 - 50.00 for  food , and 15.00 - 25.00 for bar prices for a 4 hour event, and then for a cocktail reception I start giving price ranges.  Some people just go I will get back to you.  Many callers start to answer my questions   for example how many guest, what style of reception ,seated dinner, cocktail party, food stations, afternoon tea and on and on. Then  the venue if it is a home with a tent needed, one of the preferred venue we are in , a park etc.  Also I ask what type of food they would like and this is were I get an I idea  where to go with the food budget. This way I'm getting information and giving information to brides or mothers of the bride.
